Lentil and Bean Burgers

Last week I spent some time down in lovely Cornwall.  Ive been going here since I was a baby and is a great place to just get a break from the business of London.  Although, its always an extremely active holiday with Surfing, tennis and rounders on the beach.  I also associate Cornwall with barbecues on the white sandy beach.  This inspired me to create some burgers that I could take down and enjoy grilled on the BBQ in the evenings.

These are not only full of protein from the lentils but also taste really meaty.  I know that sounds weird but they do, the are filling and dense and I love them.  They also taste so great on the BBQ as it adds a smoky taste. YUM.

Here’s how to make them:

  • 1 mug of lentils
  • 1 sweet potato
  • 1 can of black beans
  • 1/2 can chickpeas
  • 2 tablespoons tahini
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon of chili powder
  • Handful of fresh coriander
  • 2-3 tablespoons flour
  • 1\2 mug breadcrumbs

The method, as always, is super simple.  Peel then cook the sweet potato either in the microwave or oven.

All you have to do now is put everything APART from the lentils in the blender and blend until smooth.  Add the lentils and pulse a few times until half blended and half in tact.  If the mixture is too wet to mould add flour a tablespoon at a time.

Roll each patty in flour before placing on your BBQ, oven or you can fry them.  Either way they are delicious and I can assure they will be your new BBQ staple.
