Seedy Loaf

I LOVE BREAD.  Literally one of my most favourite foods in the whole entire world.  I mean who doesn’t?  Its quite simple, I wanted to make  loaf of bread that was PACKED full of goodness.  Pumped with protein and full of fats (the healthy kind).

My favourite bread has always been seeded anyway, the crunch takes avocado toast on a Sunday morning to a new level.  I wanted to create a loaf of bread that was basically just seeds and grains  and didn’t take as long to make as normal bread, without it tasting horrible.  I think I did it!

For this amazing seedy loaf you will need:

  • 1 Mug of ground flaxseed
  • 1 mug of pumpkin seeds
  • 1 mug of cooked quinoa
  • 3 tablespoons flour
  • 1 teaspoon of baking powder
  • 2 eggs
  • 1 tablespoon olive oil

This is honestly the easiest bread recipe you will ever try in your life.  Bung everything into a large mixing bowl and mix thoroughly until it forms a very thick dough.

Place in a baking tin (I use a long thin one, usually used for banana bread) and bake for 30 mins at 170 degrees.

DONE! This is mouthwateringly good with a dollop of almond butter or some crushed avo and chilli. YUM.  Happy Sunday Brunching.
