What do we do on a bank holiday? BAKE. ALWAYS.
Long weekends are the perfect time to spend time baking treats in your kitchen and then devouring them up. I’ve made these totally dreamy, chocolaty, coconutty, almondy bites that are semi-healthy so you can eat the whole lot! In fact, they have hardly any sugar in, are completely vegan, and full of healthy fats to satiate you. I have used natural sweetener in this recipe and I really recommend Sukrin! If you want to use actual sugar then that’s fine.
Here’s how to make it:
For the base –
- 1 mug of desiccated coconut
- 1 mug almonds
- 3 tablespoons of coconut oil
- 3 tablespoons almond butter
- 1 teaspoon of sukrin /stevia
For the chocolate top –
- 4 tablespoons cacao
- 3-5 tablespoons of sukrin/stevia
- 4 tablespoons coconut oil
Okay, so first things first add your almonds and desiccated coconut into a bowl and combine. Next add the almond butter, coconut oil, and sukrin into a bowl and melt over a low heat (microwave or stove) until all the coconut oil is fully melted.
Combine the dry and wet together and mix until wet and sticky. Press it down into a tin and put in the freezer for 10 minutes.
Meanwhile, make the topping by melting the cacao, coconut oil and sukrin in a bowl. Make sure there is no lumps AT ALL.
Pour the chocolate heaven onto the base and back in the freezer for 10 mins. Take out and slice then enjoy!
Make sure to keep in the fridge. Oh, my GOSHHH THESE ARE DELICIOUS!
