PB & J Granola

It has been a long old week this week.  Lots of exciting stuff going on but I’ve found myself running around London like a crazy woman.  Time for the weekend and to relax for a bit, recharge and refuel.  I’m craving comfort food, and what is more the ultimate happy combination than Peanut Butter and Jam (or Jelly to my US friends).

I’m totally addicted to granola, as you probably all know.  I can go through boxes and boxes at a very scarily fast rate.  So I try to make my own now.  It’s slightly healthier, without any refined oil or too much sugar, and I tend to eat it slower.  So here is my absolutely delicious, mouth-watering, sweet, comforting PB & J Granola, that you absolutely MUST try!

You will need;

  • 2.5 mugs of oats
  • 5 tablespoons peanut butter
  • 5 tablespoons jam (your choice of flavour)
  • 4 tablespoons of maple syrup
  • 1 tablespoon of coconut oil

With every one of my granolas, I like to heat and mix the wet ingredients before adding to the dry oats.

In a bowl place the jam, peanut butter, maple syrup and coconut oil.  Place in the microwave or on a hob until all the coconut oil has melted nicely.

Add this delicious liquid into the oats and mix thoroughly so all the oats are coated.

Now line a baking tray with baking paper and pop in the oven at 180 degrees for about half an hour.  You will need to stir this once or twice to get an even bake.

Next, you MUST leave to completely cool.  This step is critical as you need to let the coconut oil harden so the granola gets crunchy.  If not you’ll get soggy oats.  Obviously, you can eat some whilst still warm!

When completely cool store in an airtight container for around a week.  I love my granola by itself but this is great with plant-based milk, on top of coconut yogurt or even used as a crumble topping.
